Murgh Malaiwala – Delicious Chicken Recipe

People who love to eat are always the best people.

Nothing can beat the sumptuous flavours of Pubjabi cuisine. They are known for their love of ghee and adding it on practically all of their foods. But even with the notches of ghee and all the calories that come with it, you cannot deny that nothing can ease your hunger like the food of the Punjabis.

Here is a surprising Punjabi chicken recipe that is made with no oil or ghee. Soft and tender chicken pieces cooked in a blend of masalas, milk and cream is the most healthy and perfect dish for your dinner.

You are going to need the following ingredients.


For the gravy:

1 cup cream
3 green chillies, chopped
1 onion, chopped
2 1/2 cup milk
1 tsp green cardamom powder
1 tsp chopped ginger
2 Tbsp chopped coriander leaves
1/2 tsp dry ginger powder
1 tsp white pepper powder
1 tsp fenugreek leaves (kasoori methi)
2 tsp garam masala
A pinch of saffron
2 tsp chopped almonds
Salt, to taste

For the marinade:

5 chicken drumsticks
1 tsp ginger paste
1 tsp garlic paste
2 tsp white pepper powder

For the garam masala:

1 black cardamom (badi elaichi)
6-8 green cardamoms(choti elaichi)
1 piece mace (javitri)
2 tsp cumin seeds (zeera)
4-5 cloves (laung)
1 cinnamon (dalchini)
4-5 black peppercorns(kali mirch)
6-7 dried rose petals


For the marination:

You can use any meat of the chicken to make this dish, but I personally feel that chicken drumsticks bring more flavour to it. So take the chicken drumsticks and make small incisions on them. This will help the chicken soak in more flavour. Marinate the chicken with ginger, garlic paste and white pepper and set it aside for 30 minutes. Don’t add lemon juice as that will curdle the milk.

For the garam masala:

Heat a pan, and dry roast the following items to prepare the garam masala. Add a whole cardamom, 6 to 8 green cardamoms, a small piece of mace, 2tsp cumin seeds, 5 cloves, 1 cinnamon broken and a small handful of black pepper. Once they are well roasted, grind them in a mixie. In between grinding, add a pinch of dried rose petals. Make sure the mixture is ground into a fine powder. Set it aside. 

For the gravy:

Heat a pan and add 1 cup of cream, finely chopped onions and green chillies. Cook on a medium flame until the onions are nice and soft and the cream is on the verge of drying up. You can start to smell the unique aroma that this recipe is famous for.

Now, add 2 and half cups of milk. Give it a stir and add the marinated chicken, 1tsp green cardamom powder, 1 inch piece of ginger chopped finely, a handful of coriander leaves, half teaspoon of dry ginger powder, 1tsp of white pepper powder and salt to taste. Cook the dish for 10 minutes and finish off the chicken with the garam masala powder.

You can add kasuri methi to add more flavour. Let the chicken simmer for a while in a low flame. Once the chicken is cooked, add a pinch of saffron and you are done. Garnish it with sliced almonds and serve hot.
